People without coeliac disease who are reaping the benefits of a gluten-free diet maybe explained by the discovery of a protein in wheat that contributes to non-coeliac gluten sensitivity and triggers inflammation in chronic health conditions such as multiple sclerosis and rheumatoid arthritis, according to research presented at the United European Gastroenterology (UEG) meeting in Vienna, Austria.
