Olive oil is a healthy option for the home cook, retaining quality and nutritive value when heated, new research has found.

Tackling the question of whether heating olive oil for home cooking destroys the nutritional value of the oil, research from the United States has shown that a significant amount of total phenols and individual phenols such as oleocanthal remained after heating at 121°C.
